Heat a large pan or wok on medium-high with a little oil. Add minced garlic & cook for a few seconds, or until soft & fragrant - watch carefully so it doesn't burn!
Toss in the chopped leftover adobo with its onions, garlic, & sauce (bay leaves removed). Cook for 1-2 minutes, or until sauce & chicken are heated through.
Add the cold white rice & combine well for another 2-3 minutes, or until the rice has absorbed the sauce & everything is heated through.
Turn off heat & garnish with green onions if you're feeling fancy. Enjoy as is or with fried eggs & ripe mangos for extra protein & fruit!
