MAKE SAUCE

In a serving bowl, combine gochujang, gochugaru, kimchi brine, rice vinegar, light soy sauce, sesame oil, & honey.  Stir until honey dissolves then set aside.

COOK NOODLES

Boil buckwheat noodles according to the package's directions. You can also use Somen, Somyeon, or soba noodles. Drain then submerge them in cold water to cool.

TOSS NOODLES

Combine the sauce and freshly cooked noodles until they're evenly coated. These spicy Korean cold noodles are best enjoyed fresh!
