easy chicken adobo
Heat a large pot on medium-high heat Add the chicken flat-side down & sear until golden brown - but not cooked through
Remove chicken, toss in the onions. Sautee for a few seconds, then add garlic and sauté until soft and fragrant.
Add the chicken back in . Pour in soy sauce, sugar, vinegar, bay leaves, & black pepper. Simmer uncovered for about 20 minutes.
Flip halfway through, but don't stir so the vinegar has time to cook & for the sauce to thicken.
Serve with hot fluffy rice. It's the easiest pantry staple dinner or meal prep done in 30 minutes or less!
