Cook thin shallots in for  10 mins or until lightly golden.

 GARLIC TIME!

Add TONS of garlic & simmer for  20 minutes for a deep, garlicky flavor.

PEPPERCORNS TOAST

Dry toast Sichuan peppercorn. Then grind in a mortar & pestle to a coarse powder.

THAI CHILI SURPRISE

Add thai chilies for spicy flavor!  Grind with salt until it's a rough paste.

Mix Sichuan chili flakes, ground Sichuan peppercorn, sugar & five-spice.  Then add to oil to release their spicy flavors!

FLAKES OF CHILI

Add soy sauce along the edges to create a smokey flavor, then add rest of the oil.  Let cool for 30 mintes.

FINAL TOUCHES

Transfer chili garlic oil  to a clean, air-tight jar.  Now it is READY when you are!
