MAKE MENTAIKO SAUCE
Start with the base of Mentaiko Pasta Sauce. Combine Kewpie mayo, soy sauce, & mentaiko (spicy cod roe) in a heat-proof bowl.
Butter makes EVERYTHING better! Cook shallots in butter until it's tender and golden. This will add a subtle sweetness to the dish.
Caramelize the shallots even more by adding sake & add extra depth of flavor. Cook until alcohol evaporates.
A quick way to add robust flavor is through dashi stock. You can easily find it al local Asian markets or Amazon in powder form for long shelf-life.
Pour in the heavy cream and shredded parmesan cheese. Cook until it's luxuriously creamy and melted.
Add the creamy sauce you made to the Mentaiko pasta sauce and stir until well combined.
Boil spaghetti noodles until they're tender. Drain them and get ready to feast because dinner is almost ready!
Now for the most exciting part - toss the noodles in the mentaiko sauce until they're well coated. These noodles are enjoyed fresh!
