Heat rice vinegar, salt, & sugar until dissolved, then slowly drizzle over hot rice. Gently fold together until well combined.

Make the salmon sushi filling by combining Japanese mayo, cream cheese, ponzu, light soy sauce, sesame oil until smooth. Then, mix in flaked salmon & green onions.

In an 8x8 baking dish, layer on seasoned rice in an even layer, sprinkle on furikake, salmon filling, then...

Sprinkle on more furikake and drizzle on Japanese mayo, & sriracha, unagi sauce. Bake for ~15 minutes or until heated through.

Serve your salmon sushi bake with seaweed chips and (if you're feeling fancy) all your fave sushi fillings like avocado, cucumber, & more!
