SICHUAN CHILI OIL
Sauté shallots in neutral oil until they're lightly golden.
Turn heat to low & infuse oil with garlic for a robust garlic flavor.
Add chilies & salt to a mortar and pestle. Grind until it's a course paste.
ADD SOY SAUCE & CHILIES
Add light soy sauce & salted chilies to oil and simmer for about 10 minutes.
Mix together chili flakes, ground Szechuan peppercorns, sugar, and five spice.
Season oil with chili flakes mixture & stir in additional oil. Allow it to cool for at least 30 minutes.
STORE & ENJOY
Transfer to an airtight container & get ready to enjoy it on EVERYTHING!
