Lightly brush wontons with a little oil, then place them on a parchment-lined baking sheets, working in batches if needed so the wontons don’t overlap. Cook wonton wrappers for 3-5 minutes, or until golden and crisp. Set aside.
In a large bowl, mix together sauce ingredients. Set aside.
In a separate mixing bowl, combine the shrimp, garlic powder, onion powder, and paprika.
Heat a large pan on medium-high heat then add about a tablespoon of oil. Toss in shrimp and cook until they’re pink and slightly charred. Transfer them to a cutting board and give them a rough chop.
Toss the shrimp in the sauce, then gently fold in the avocado and chilies. Serve with the crispy wonton chips on the side and enjoy!
