Make your inner child proud while feeding your gains! This Taro Protein Rice Krispies Treats recipe makes the CHEWIEST GOOIEST rice krispies with only 6 ingredients in under 20 minutes!
Lightly oil a 8x8 baking dish to prevent the rice krispies from sticking. Set aside.
Heat the large pot on medium heat, add butter and cook for about 5 minutes, or until the butter has browned with a nutty aroma.
Decrease the heat to low, toss in the mini marshmallows. Cook for about 5-10 minutes or until most of the marshmallows have melted with a few lumps still visible.
Turn off the heat, quickly pour in milk, ube extract, and salt until they’re incorporated into the marshmallows. Then, quickly mix in protein powder until well combined.
Pour in rice krispies and stir until the rice krispies are evenly coated with the marshmallows.
Pour into the baking dish. Wet your hands with water then gently spread rice krispies into an even layer. I love soft gooey rice krispies, so I do NOT press them down because they become hard.
Plop rice krispies out of the baking dish, sprinkle with coarse salt if you like sweet and salty combos (optional but highly recommend)! Cut into equal pieces & enjoy at least one immediately while still warm and gooey!

Marshmallows: Used sugar-free mini marshmallows for low calories but regular mini marshmallows too! Mini marshmallows melt more evenly compared to regular or jumbo marshmallows.
