🥘 Ingredients
- Crispy Rice Cereal: Rice Krispies, brown rice cereal, or any crispy cereal of choice. Even gluten-free Rice Krispies work too!
- Marshmallows: I’m using sugar-free mini marshmallows to keep the calories low for this recipe, however, you could use regular mini marshmallows too! I highly recommend using mini marshmallows because they’re easier to melt evenly compared to regular or jumbo marshmallows.
- Protein Powder: This Taro Milk Tea Protein Powder is what gives the protein rice crispy treats its flavor! You could also swap it for any of your fave protein powders if you want to swap flavors! Just make sure you like the protein powder you use, otherwise, you won’t like these rice crispies!
- Fairlife Milk: For extra protein, add a splash of Fairlife milk! This is also a secret to keep your rice krisies treats soft and chewy!
- Butter: We’re going to brown the butter to create a subtle nuttiness and make your rice krispies treats next level! Alternatively, you can use coconut oil.
- Ube Extract: This is optional more so for an extra vibrant purple color!

🔪 How to Make Protein Rice Krispie Treats
Step 1: Brown Butter & Melt Marshmallows. In a large pot, melt butter on medium heat until it’s browned and has a nutty aroma.
Reduce heat to low, add mini marshmallows. Slowly cook them until they’re mostly melted, but with some visible lumps.


Step 2: Add Mix-Ins. Turn off heat, quickly stir in milk, ube extract, salt, and protein powder until smooth.
Pour in rice krispies and mix very well until they’re evenly coated in the taro marshmallow mixture.


Step 3: Assemble. Pour taro protein rice crispies into a greased baking tray. Lightly oil your fingers and gently spread them to an even layer.
Flip rice krispies out of the tray, sprinkle with flakey salt (if using), then slice into even pieces. Enjoy!

- Cook Marshmallows Low & Slow: Cook them low & slow until they’re JUST melted, then turn off heat & combine with rice krispies. Don’t overcook them, otherwise, the rice krispies turn hard!
- Don’t Press Down Rice Krispies: If you want soft chewy rice krispies, gently spread the mixture into the tray WITHOUT packing them down firmly, otherwise, they’ll turn tough.
- Oil Surface Areas: The rice krispies mixture is very sticky, so oil the baking tray, your hands, and knife well to avoid a sticky mess.
🥡How Do You Store Rice Krispies Treats?
Keep your protein rice krispies soft and chewy by wrapping them well in plastic wrap and keep at room temperature. If you want your them extraaaa gooey like when they’re made fresh, pop them in the microwave for a few seconds, until soft.
These taro protein rice krispies treats are best enjoyed within a week (if they last that long hehe)!

Taro Protein Rice Krispies Treats Recipe

Ingredients
- 2 ½ tablespoons unsalted butter
- 10.5 ounces box choc zero s’mallows mini marshmellows
- 3 tablespoons fair life milk or water
- 1/2 teaspoon ube extract
- ¼ teaspoon plain salt
- 3 scoops taro boba protein powder
- 4 ½ cups rice Krispies
- Course or flakey salt optional
Instructions
- Lightly oil a 8×8 baking dish to prevent the rice krispies from sticking. Set aside.
- Heat the large pot on medium heat, add butter and cook for about 5 minutes, or until the butter has browned with a nutty aroma.
- Decrease the heat to low, toss in the mini marshmallows. Cook for about 5-10 minutes or until most of the marshmallows have melted with a few lumps still visible.
- Turn off the heat, quickly pour in milk, ube extract, and salt until they’re incorporated into the marshmallows. Then, quickly mix in protein powder until well combined.
- Pour in rice krispies and stir until the rice krispies are evenly coated with the marshmallows.
- Pour into the baking dish. Wet your hands with water then gently spread rice krispies into an even layer. I love soft gooey rice krispies, so I do NOT press them down because they become hard.
- Plop rice krispies out of the baking dish, sprinkle with coarse salt if you like sweet and salty combos (optional but highly recommend)! Cut into equal pieces & enjoy at least one immediately while still warm and gooey!
