A key part is the roasted charred flavor that adds complexity with the sweet corn & salty miso butter. And the best part is that you can do it stovetop – no grill required! 🌽 Miso Butter Corn Ingredients
We only need 5 ingredients for this easy miso corn recipe, making it one of the simplest Side Dish Recipes! If you’re feeling fancy, you can sprinkle on some chopped cilantro as a garnish to make it a fancy 6-ingredient recipe hehe.
Miso Butter
- Miso Paste: White miso, also labeled “shiro miso” (“shiro” means “white in Japanese) has a milder flavor compared to red miso. I prefer the white miso & butter combo because it doesn’t overpower the sweetness of the corn.
- Butter: Unsalted butter since there’s plenty of salt in the miso & soy sauce. Speaking of which…
- Soy Sauce: We’re using regular soy sauce or you can swap it for coconut aminos.
- Honey: Just a little honey (or even HOT honey!) gives a subtle OOMPH of sweetness for a sweet-salty flavor slathered onto the fresh corn! And the corn you use matters…
Corn
We’re using fresh corn on the cob because since it’s dry, it’s much easier to get a beautiful roasted char with smokey flavor! Fresh corn also tends to be sweeter and firmer compared to canned corn, which is naturally soggier from soaking in liquids.

🔪 How to Make Skillet Roasted Corn on Stovetop
Step 1: Cook Corn. Heat skillet to medium, then add corn cobs to the DRY pan – no oil. Cook corn undisturbed for 2-3 minutes, or until they start to blacken, then use tongs to rotate the corn cobs & repeat until kernels are plump are black, about 10-15 minutes.

Step 2: Mix Miso Butter. While the corn is cooking, mix white miso & softened butter in a small mixing bowl. Use the back of a spoon to combine until smooth, then stir in soy sauce & honey.
Step 3: Slather & Garnish. Once the roasted corn is done, use a brush to slather the miso butter while it’s still warm. If you’re feeling fancy, garnish with roughly chopped cilantro & serve immediately!


🔪 How to Cut Corn off the Cob
If you don’t like corn getting caught between your teeth & prefer your miso butter corn off the cob, use this super easy trick! This is the simplest way to slice corn off the cob – without having kernels flying in every direction of your kitchen!
Take a large bowl, prop corn on top of a small bowl or dish, then run a small knife down the core of the cob. All your corn falls into your bowl – easy peezy!


💭 How to Store & Reheat Miso Corn
If you have any leftovers, store your miso corn in an airtight container in the fridge for up to 5 days.
Reheat covered in the microwave in 30 second intervals, until warm.

Skillet Roasted Miso Butter Corn

Ingredients
MISO BUTTER:
- 3 tablespoons unsalted butter softened
- 2 tablespoons white miso paste room temperature
- 2 teaspoons honey or hot honey
- ¼ teaspoon soy sauce
INGREDIENTS:
- 4 ears sweet corn husks removed
- Chives or cilantro roughly chopped, optional for garnish
Instructions
- Heat a large skillet over medium heat. Add corn to the dry pan & cook undisturbed for 2-3 minutes, or until corn begins to char. Turn & cook corn until the rest of the corn is charred & cooked through, about 10-15 minutes.
- While the corn is cooking, make the miso butter in a small mixing bowl. Combine unsalted butter & white miso paste using the back of a spoon until smooth & well combined, then mix in soy sauce & honey. Set aside.
- Remove corn from pan, then use a brush to slather miso butter on the cobs while hot. For corn off the cob, use a large bowl then place a smaller bowl inside turned upside down. Stand the cob on top of the small bowl using one hand to hold the top of the corn & the other to run your knife down the cob to remove the kernels (pictures in blog post above). Transfer to a serving plate, & garnish with chives or cilantro & lemon or lime wedges if you’re feeling fancy. Enjoy!
Notes
- Miso Paste: White miso paste, is also labeled “Shiro” miso paste (“shiro” means “white” in Japanese). You can easily find this at local Japanese or Asian markets in the refrigerated section.
- Regular Soy Sauce: You can also swap for coconut aminos.
- Unsalted Butter: There’s plenty of salt in the soy sauce & miso paste already. For easy mixing, make sure the butter is softened to room temp.
- Corn: Fresh corn is best because it’s usually sweeter, firmer, & since it’s dry, it chars much easier & better than canned corn.
