🥘 Ingredients for Miso Caramel Popcorn
Surprisingly, you only need a handful of ingredients to make this recipe, but each one has a crucial role!
- Honey: This helps prevent the sugars from crystallizing when making the caramel & gives caramel more body, smoothness, & extra sweetness. Light corn syrup creates a more traditional caramel flavor but isn’t always easy to find, so honey makes a great substitute! Keep in mind though, your miso caramel popcorn will need an additional 15 minutes baking to dry out to get crisp (60 minutes total) since honey holds more moisture. It will also have subtle notes of honey in your caramel popcorn – still absolutely delicious!
- Cream of Tartar: This secret ingredient helps you nail the perfect caramel texture EVERY time! Sugar crystals make caramel unpleasantly grainy instead of smooth, which is why we’re avoiding them at all costs! As your safety net, I HIGHLY recommend adding cream of tartar, especially as a beginner making caramel! The acid from cream of tartar prevents sugar crystals from forming! Yay science!
- White Miso Paste: White miso paste is also labeled as “shiro” miso paste (“shiro” meaning white in Japanese). It’s mild & delicate in flavor, while still adding saltiness & savory umami for this Asian-inspired popcorn.
- Brown Sugar: I prefer brown sugar over white sugar for an extra toffee-like flavor that pairs so well with the miso.
- Baking Soda: This turns your caramel light & airy to easily spread onto your popcorn without hardening into thick, hard cement.

🔪 How to Make Homemade Miso Caramel Popcorn
Step 1: Pop Popcorn Kernels.
Use a popcorn maker if you have one, otherwise, making it stovetop with a large pot works just as well! Heat a large pot on medium heat with neutral oil until hot, then add the popcorn kernels & cover with a lid. Once they’re fully popping, give the pot a good shake, then let them finish popping.
You’ll know they’re done popping when you can count to 3 between pops. Transfer them to a baking tray & keep warm in the pre-heated oven.

Step 2: Make Miso Caramel.
Heat a medium-sized pot on medium, then melt the butter & add brown sugar, honey, cream of tartar, & salt. Stir until just combined, then DON’T STIR. If you see any uneven cooking, swirl the pot to mix the ingredients.
Once the sugar melts & turns an auburn color, remove the caramel from the heat & quickly whisk in the white miso paste, vanilla extract, & baking soda. The baking soda will make the caramel foam up – this is what you want to make the caramel light & airy!

Step 3: Mix & Bake.
Quickly combine the caramel & popcorn (I usually just combine them in the baking tray but you can use a large bowl or pot). Divide popcorn onto 2 trays & bake for 45 minutes for corn syrup or 60 minutes if using honey, mixing every 15 minutes. This is how you dry out the popcorn for CRISPY caramel popcorn!
Once it’s done, give it a final few tosses to release the sticky popcorn from the tray & break up big chunks. Then, (try your best to) let it cool completely before enjoying!

👩🏽🍳 Key Tips
This homemade miso popcorn recipe is SUPER easy, but here are a few extra nuggets that make the process fool-proof with easy clean up too!
- Remove Unpopped Kernels: Don’t want any cracked teeth while enjoying dessert, so I HIGHLY recommend taking a couple seconds to grab any unpopped kernels! They sink to the bottom, so they’re easy to find!
- Keep Popcorn Warm While Making Caramel: This is how you easily distribute the caramel onto the popcorn! Keep the popcorn in the warm oven while making the caramel. It’ll spread much easier on warm popcorn rather than quickly hardening on cold popcorn!
- Use Light Colored Pot & Silicone Spatula: Use a light-colored heavy-bottomed pot, such as a stainless steel pot, for even heat distribution. The light color pot helps you easily see the color change in the caramel vs a dark colored pot. Use a silicone spatula to scrape out ALLL the delicious caramel from the pot to reduce waste!
- DON’T Stir Caramel While Cooking: Stirring can accidentally introduce debris into the caramel that can cause gritty sugar crystals. Instead, carefully swirl the pot if you need to mix the caramel.
- Use a Turkey Tray for Easy Mixing without the Mess: This is totally optional BUT the high sides of a turkey tray makes mixing SUPER easy without having a mess of popcorn all over your kitchen counters & floor. The disposable turkey trays from Walmart are only like $1, but using large baking sheets work too.
- Soak for Easy Clean Up: Any caramel residue on cookware or utensils are SUPER easy to clean by soaking it in hot soapy water for a bit, then it’ll dissolve & come right off!
How to Store Caramel Popcorn?

- 1/4 cup vegetable oil not required if air popping with a popcorn maker
- 1/2 cup popcorn kernels for candied/fully coated popcorn use ⅓ cup
MISO CARAMEL:
- 7 tablespoons unsalted butter
- 1 cup brown sugar packed
- 1/2 cup honey or corn syrup*
- ¼ teaspoon cream of tartar
- ½ teaspoon salt
- 3 tablespoons white miso paste
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
Instructions
POPCORN:
- Preheat oven to 250°F.
- Heat a large pot with oil over medium heat. Once hot, add a few pieces of popcorn to test heat, wait until they pop, then quickly remove.
- Add remaining popcorn, lift pot off the stove to shake & evenly spread the corn. Cover with a lid. Once the popcorn starts intensely popping, shake the pot gently once.
- Once the popping stops (when you can count to 3 between pops), transfer popcorn to a large baking dish.
- Remove any unpopped kernels, then transfer to the preheated oven to keep popcorn warm until ready to coat in caramel.
MISO CARAMEL
- Heat a saucepan with high sides over medium heat. Add butter & heat until melted.
- Add brown sugar, honey or corn syrup, cream of tartar, & salt. Stir until just combined.
- Once it starts to bubble, simmer for 4 minutes – DO NOT STIR! If you see uneven coloring / cooking, carefully swirl the pot.
- Remove from heat then quickly whisk in miso & vanilla extract until just dissolved, then whisk in baking soda. Once you add the baking soda, the caramel will foam and increase in volume.
- Quickly pour straight over popcorn & toss until caramel coats popcorn as evenly as possible & starts to harden.
BAKE
- Spread popcorn on 2 baking trays.
- Bake for 1 hour if using honey OR 45 minutes if using corn syrup, tossing every 15 minutes.
- Remove from oven. Toss to release popcorn from pan & gently breakup any big chunks. Continue tossing until they start to cool & harden, then allow to cool completely. Transfer to airtight containers to stay crisp for up to 2 – 3 weeks!
Notes
- Corn Syrup OR Honey: This helps prevent grittiness in your caramel caused by sugar crystallization. Corn syrup creates a more traditional caramel flavor but honey is a great substitute!
- Honey needs an extra 15 minutes baking to crisp up (60 minutes total) since honey holds more moisture. It will also have subtle notes of honey in your caramel popcorn – still absolutely delicious!
- Cream of Tartar: This is a safety net for beginners to nail perfect caramel EVERY time! The acid prevents sugar crystals from forming.
- White miso paste is also labeled as “shiro” miso paste (“shiro” meaning white in Japanese). Find miso in the refrigerated section of Asian or Japanese markets.
- Baking Soda: This turns your caramel light & airy to easily spread onto your popcorn without hardening into thick, hard cement.
